As some of you already know from my Instagram stories, I have initiated a recycling program at my job. For some ridiculous reason, they insist on drinking water strictly from plastic water bottles. I hate to see it. So after much back n forth, I set up a few mini bins for them to recycle into.
Basically twice a week, I personally take the bottles to the recycling center 5 minutes up the road. Very fulfilling to do even though it’s a small impact on whatever else they do in their lives.
As a token of my appreciation for attempting to save our planet from an inferno, I decided to bake them some cookies. I’m not the baker but my significant other is a semi-professional one. Thank god for him. So we made some chocolate chip cookies!
Recipe:
Yields 2-3 dozen cookies
Ingredients
1 cup vegetable shortening
1 cup white (granulated) sugar
1 cup light brown sugar packed
2 tsp pure vanilla extract
1/2 cup unsweetened apple sauce
3 cup all-purpose flour
1 tsp baking soda
½ tsp baking powder
1 tsp sea salt
10oz bag semi sweet chocolate chips (Kroger has their own brand of chips that work and I also like Enjoy Life’s)
Method:
1. Preheat oven to 375F
2. Mix the shortening and sugars first. Then add the apple sauce and vanilla. Then all the dry ingredients. Lastly, the chocolate chips.
3. Place dough balls onto a greased baking sheet and bake for 10 minutes
If you’re interested in reading a good book on environmentalism that isn’t preachy or heavy in the statistics, I 10/10 recommend ‘What We Leave Behind’. I read it for an environmental sociology course at UVA and love it still to this day.
Always remember, although you are small, you are significant. Don’t let ANYone tell you what you’re doing isn’t impactful.
