Oh yes this Southern, Vegan gal has done the unthinkable; made mock fried chicken with mushrooms. Is it so wrong for me to want to make such a thing? I mean it’s a crowd favorite and if I can enjoy some good eats with less harm, why not?!
This year I’ve gotten really into mushrooms. I loveeee eating them, foraging them and now even growing them! Right now, the easiest way I’ve been growing them is with kits. I got some kits from North Spore and they have been so wonderful! The first one I grew were the Blue Oyster Mushrooms below:
Not trying to give you my whole life story so let's get to cookin'!
Country Fried Oyster Mushrooms
Ingredients:
1 fresh flush of Oyster Mushrooms
Enough oil to fry in your pot
Batter:
1 cup of all-purpose flour
¾ cup of water
Dry Coat:
1 cup of all-purpose flour
½ teaspoon of salt
½ teaspoon of pepper
½ teaspoon of paprika
Method:
1. Start bringing oil to medium heat in a deep pot
2. Cut mushrooms into chunks at the base
3. Make the batter. Add more water if you need it to be looser. Should be pancake batter consistency.
4. Dip mushrooms and coat fully in the batter
5. In a container or brown paper bag, mix the dry ingredients
6. Put battered mushrooms into the dry mix and SHAKE
7. Slowly drop the breaded mushrooms into the oil and fry until golden brown for about 5-8 minutes
8. Serve hot with some vegan ranch, BBQ sauce or honey mustard
