Creole French Toast

When I was in my Fourth year at UVA I created this recipe on accident! I was feeling homesick and wanted my mama's french toast. I only had at the time some caramel coffee creamer for mylk and this cheap loaf I got from Kroger in the kitchen. So I tried to make a quick french toast and it banged. I later that year entered this recipe into a cooking contest and won best dessert! I call it Creole French Toast because tradition French Toast isn't this sweet but Creole style French Toast is meant to be more of a dessert than breakfast. Okay, enough backstory, here's the super simple recipe.

Recipe

Ingredients:

Caramel flavored Non-Dairy Coffee Creamer*

Cinnamon

Coconut Oil

Thick Cut Sliced Bread

Desired toppings can be: Coconut Whip Cream, Agave Nectar, Berries & Hemp Seeds, etc.

Method:

  1. In a bowl whisk in some cinnamon with the creamer until well incorporated.

  2. In a skillet, heat a tablespoon of coconut oil on low heat

  3. Take the bread slices and dip both sides into creamer mixture and then lay in the skillet.

  4. Toast the bread on both sides for 2-3 minutes each

  5. Top with all your fixins and enjoy!

*I Just wanted to note that traditional French toast uses milk and eggs but because this is vegan and coffee creamers are so thick, you don't need an egg substitute for this to work.*

As you can see this is a super affordable, easy recipe to make! The ingredients are cheap and probably already in your house. I love to eat this with some veggie sausage and tofu scramble. If you make this recipe please tag me on Instagram or Twitter @withcarrington so I can see!

Sending all the love and light and Creole French toast from here to there! Take Care! - Carrington
